Michael signed a consultancy contract with Wildfire, one of Sydney’s coolest and busiest new harbourside restaurants.  He brought with him the unique skill of delivering high quality food to large volumes of people. 

In 2005 the Accor Group engaged Michael’s services to rebuild the Summit’s flagging reputation.  Long after settling into his role as Chef/GM, Accor could see Michael’s strengths as a large scale restaurateur and promoted him to Group Food Director or Sofitel Hotels and Resorts Australasia. From this close association came the opportunity to buy the restaurant and in mid 2007 Michael bought the Summit lock stock and wine cellar!

Michael has brought a rigorous approach to the Summit’s five-star location and has taken this Sydney icon to a whole new level delivering world class food and exceptional service.

Michael takes culinary inspiration from the people and city of Sydney. His passion for premium Australian produce is translated into imaginative, superbly presented dishes with international flair that expertly marry fresh local flavours.

Now in his 7th year on television, Michael is well known throughout Australia for his weekly TV cooking segments on Mornings with Kerri-Anne on National Network Nine. A celebrated all rounder, Michael has also appeared on such programs as Today Show, Domestic Blitz, Sunrise, The Morning Show and held a long standing relationship as guest co-host for Fresh Cooking on Network Nine. 

His great press coverage ranges from newspapers interviews articles to national glossies including Vogue Entertaining & Travel, Luxury Traveller Magazine, Gourmet Traveller, O.K! Magazine, Woman’s Weekly, Woman’s Day and Foxtel Magazine.

A committed charity supporter, Michael is an Ambassador for The National Breast Cancer Foundation and supporter of The Sydney Children’s Hospital Foundation, Starlight Children’s Foundation and St. Vincent’s’ Hospital Foundation.
