Good food starts at the shops. Go to buy food with an idea of what you want but be flexible. Season is a vital ingredient and can make or break a dish. The difference is not always so easy to see, often ugly food is the most tasty, heavy ripe figs can look bruised  but taste the best. Heavy tomatoes always taste better than light ones and like figs they should never go in the fridge on the day you plan to eat them.

Markets are the best places to learn about food, but a market is not always full of the best things, the challenge is to discover them. When a chef goes to a market he plans on getting his hands dirty and he expects to eat!! The best producers want you to eat so if you try to buy something and they won’t let you taste it,  move along to someone who is proud of the flavour of their produce. Get to know your butcher and fishmonger and order in advance for special things, remember that

quality does cost but can still be enjoyed in smaller amounts.

Knives

Are a personal choice as long as they are of a good quality, spend more on fewer knives and look after them. Knife blocks are very good and help keep your knives sharp, even professionals who can sharpen a knife on a steel get their knives reground every year.
